Lets talk about Thanksgiving, AKA the most delicious of all holidays to ever exist! When I was younger there was nothing more I’d look forward to than sitting down to a plate of mashed sweet potatoes, cranberry sauce, and my mama’s famous turkey. Since becoming plant-based I’ve left the turkey behind and have completely spruced up my Thanksgiving game with more modern and globally-inspired meals. I’ve swapped mashed potatoes for a mashed garlicky cauliflower and traditional stuffing for a quinoa version. See more about the evolving Thanksgiving table here.
Last week I was invited to join Ocean Spray® and special guest, Australian Celebrity Chef, Curtis Stone to explore the evolving Thanksgiving table from inside their cranberry bog display in Rockefeller Center®. Since I was in Thailand and couldn’t make it, I invited the wonderful Lauren Unger of HintofGreens to indulge for me. Chef Stone shared some of Thanksgiving’s most delicious dishes – incorporating traditional tastes, modern tweaks and influences from around the globe – sure to satisfy Thanksgiving traditionalists and Turkey Day daredevils alike. In true Thanksgiving fashion, each dish featured this fall’s number one ingredient: the cranberry!
Lauren reported some really interesting facts including the Chef’s recommendation to switch up your cranberry sauce by adding any of the following, dried figs, cinnamon and sugar, or Mexican spice and cilantro. You can also have fun with your cranberries by passing a jar around the table and having everyone drop a cranberry in as they say what they’re thankful for. Keep the love up by passing it around until the jar is completely full. This is sure to make Thanksgiving an even more meaningful family tradition, hence the evolving table going from being traditional and one-dimensional to playing around and keeping it modern and light.
