The past week has taken a slight toll on me. I really didn’t expect to receive the kind of response that I did after I wrote Why I’m Not Vegan Anymore, both positive and negative. Many readers took it as an incomplete description of veganism and of their community– and while I can understand why, I think some of my points may have been misunderstood and perhaps taken out of context….
Yes, you read that right. Veggie Burger Tacos. Cookbooks and breakfast are two of my favorite things. I have a countless number of cookbooks laying around my humble abode in NYC, but this specific recipe from the Two Moms In The Raw cookbook caught my eye. Everyone’s always looking for something new for breakfast and I think I may have just found the new thing. This is one of the author’s most popular (and beautiful!) breakfast recipes, Beet Shakshuka….
I ran out of bananas, my snacking cabinet was looking a little empty, and I really wanted something sweet. I don’t mean the I’m-gonna-get-fat-if-I-eat-this kind of sweet though. So I’ve never done this kind of thing before, but I figured with all the meals and recipes I’ve been posting you might be a little curious of what I actually eat in a day. I took a picture of every meal that I ate this Wednesday, where I happen to be away in Miami escaping the NYC cold. As for my meals, you should probably know that there was an apple, a sneak of sesame tofu and a few handfuls of almonds that weren’t noted.
