I like fruit and I like salad, and together it’s a superfood match made in heaven, cue my Summer Blueberry Quinoa Salad. This refreshing quinoa salad is dressed with a sweet blueberry lemon dressing and boasting with antioxidants and plant based protein. It’s the perfect addition to a summer BBQ, Sunday brunch, or workday lunch box.
Blueberries are almost always available and they pair deliciously with quinoa. I love blueberries for their versatility and superfood benefits. Blueberries have the highest antioxidant amount of any fruit and just one cup has almost 25% of the recommended daily vitamin C intake. Not to mention they’re sweeeeeeet and delish.
For the dressing, I added a splash of Bai’s Brasilia Blueberry flavor to give it an extra touch and to balance out the tart of the lemon. You can add a drop of honey into the dressing and fresh summer veggies into your salad.

- 1 lemon, squeezed
- 1 clove garlic, minced
- 1 cup blueberries, divided
- Splash of Bai's Brasilia Blueberry
- 1 cup Arugula
- ¼ cup quinoa, cooked
- In a food processor, blend the lemon juice, garlic, Bai, and ¾ cup blueberries until smooth.
- In a salad bowl, toss arugula, quinoa, dressing, and ¼ cup blueberries. Serve cool.
