Turns out, it is indeed possible and it is not at all gross. In fact, it’s rich, decadent, and so creamy you’ll be sure you’ve reached the chocolate mousse jackpot. Whether or not that exists, I don’t know, but this is as close as you’re going to get.
The base of the mousse is avocado to give it a creamy consistency, which is then blended with maple syrup, a drop of Silk Unsweetened Cashew Milk, and cacao, vanilla, and salt for light flavoring. I used a drop of Silk Unsweetened Cashew Milk to avoid the mousse from becoming too thick.
I can’t tell you enough how delicious this combination is, you’re just going to have to try it for yourself. I highly recommend letting the mousse sit about an hour in the fridge to enjoy chilled. 🙂
- 1 avocado
- ½ cup maple syrup
- ½ cup cacao powder
- 1 tsp Silk Unsweetened Cashew Milk
- 1 tsp vanilla extract
- pinch salt
- sliced almonds, for garnish
- In a food processor, puree avocado, maple syrup, cacao powder, cashew milk and vanilla extract until smooth.
- Add salt and serve or refrigerate for five minutes, or longer. Before serving top with sliced almonds and enjoy cool.
