So I know this might sound kind of crazy, but since I got to Asia I’ve been having some major cookie cravings. I planned ahead (maybe even a little too far ahead!) and brought a mini lifetime supply of Ginny Bakes Coconut Oatmeal Bliss Bake Mix to make some healthy cookies on the go. Usually I’d get crazy and add some variety to take these cookies to the next level, but I have to admit that they’re pretty perfect just the way they are.
All you have to do is add 1 egg, 3/4 stick vegan butter (or regular if you’d prefer) and 1 tsp vanilla extract. Then just ix and bake. I’ve stored them in a glass container and left them on the counter for whenever my sweet tooth is calling. Do you blame me?
