The past week has taken a slight toll on me. I really didn’t expect to receive the kind of response that I did after I wrote Why I’m Not Vegan Anymore, both positive and negative. Many readers took it as an incomplete description of veganism and of their community– and while I can understand why, I think some of my points may have been misunderstood and perhaps taken out of context….
Yes, you read that right. Veggie Burger Tacos. I admit it isn’t the first thing you think of when you think of tacos, but it is hands down the easiest way to sneak in some greens and bulk up a meatless taco. Oh and that Avocado Cream Drizzle! It pulls all of the refreshing flavors together earning these tacos a spot in taco heaven….
How often is it that you find a clean alternative to a cookies and cream smoothie? Not very. Trust me, I’ve done my research. Once you make this smoothie once, you’ll be hooked on its thick, creamy, milkshake-like consistency that you’ll want to make double to last you through the day….
Birthdays are a big deal for me. Some people just aren’t into them, but me? Nope, I bring out the balloons, birthday cakes, party hats, and glitter to celebrate! This year was no exception, especially because it was my BIG 2-1. Yup, I’m legal now and loving it! So what better way to ring it in than celebrating with good friends, great music, and an even better dessert?…
When life gives you cookies, you make Chocolate Chip Cookie Dough Sandwiches. And there’s just no questioning that. Sure you could go to the store and buy a pack of processed cookie dough, but you and I both know it wouldn’t be as tasty and, not to mention, healthy as making it on your own. I promise it’s easy as can be and will be a major crowd-pleaser. Before you get your panties in a bunch, this filling is vegan and gluten free, and when it’s paired with the right cookie it makes for a mouthwatering dessert….
Cookbooks and breakfast are two of my favorite things. I have a countless number of cookbooks laying around my humble abode in NYC, but this specific recipe from the Two Moms In The Raw cookbook caught my eye. Everyone’s always looking for something new for breakfast and I think I may have just found the new thing. This is one of the author’s most popular (and beautiful!) breakfast recipes, Beet Shakshuka….
I ran out of bananas, my snacking cabinet was looking a little empty, and I really wanted something sweet. I don’t mean the I’m-gonna-get-fat-if-I-eat-this kind of sweet though. I was thinking more like a healthy bite-sized sweet that I could eat straight out of the muffin tin if I had to. And then it hit me.
Mini. Chocolate. Chip. Muffins.…
So I’ve never done this kind of thing before, but I figured with all the meals and recipes I’ve been posting you might be a little curious of what I actually eat in a day. I took a picture of every meal that I ate this Wednesday, where I happen to be away in Miami escaping the NYC cold. As for my meals, you should probably know that there was an apple, a sneak of sesame tofu and a few handfuls of almonds that weren’t noted.
Disclaimer: This was not on a recipe development day. I tend to eat more for the sake of recipe ‘testing’ 😉…
