Soy Ginger Salmon Soba Noodle Salad
Serves: 1 serving
  • 4 oz. salmon
  • 1 serving soba noodles (based on package)
  • ⅓ cup baby corn
  • ⅓ cup water chestnuts
  • ¼ cup shredded carrots
  • 1 cup mixed greens
  • 3 T Tessemae’s Soy Ginger Dressing
  1. Bring a pot of water to boil and add the soba noodles with a tablespoon of salt. Cook until tender, about 4 minutes. Drain and rinse with cold water to stop any further cooking.
  2. Turn on broiler, season salmon with salt and pepper and place on a baking sheet. Cook salmon for 2 minutes and then remove from broiler and top with 1 T soy ginger dressing and return to oven oven for 3-4 more minutes until cooked through.
  3. In a large bowl mix together soba noodles, baby corn, water chestnuts and carrots, and add 1 T dressing and toss well. Place mixed greens on a plate and top with remaining 1 T of dressing, Top greens with soba noodles and place salmon on top and serve.
