Kale, quinoa, and chickpeas is a toasted match made in heaven. These Toasted Baby Kale and Quinoa Patties are super easy to make and don’t require any fancy kitchen equipment. They’re mixed up in one bowl, made into patties, then baked until crisp. It’s that simple. The flavors are a crunchy combination of quinoa, creamy mashed chickpeas, and savory tamari. Be careful though, you won’t be able to stop at one….

Pizza night is one of those things that you just can’t say no to. In fact, I’d create an entire night dedicated to pizza just because of this pizza. When I say this is The Best Vegan Pizza Ever, I’m not kidding. This is a naturally gluten free pizza, the crust is made out of almonds and cauliflower, and the sauce is a dreamy cashew basil spread. I’m drooling just thinking about it… OH and I just had 2 slices….
Yes, you read that right. Veggie Burger Tacos. I admit it isn’t the first thing you think of when you think of tacos, but it is hands down the easiest way to sneak in some greens and bulk up a meatless taco. Oh and that Avocado Cream Drizzle! It pulls all of the refreshing flavors together earning these tacos a spot in taco heaven….
We all love a little green, especially when it gives us an excuse to eat a big bowl of linguine. I thought and thought and thought about what kind of sauce to pair with this pasta. Cauliflower alfredo crossed my mind (as did a thick and buttery alfredo), but green always feels healthier and I had a heap of basil laying around sooo.. Creamy Green Dream Pesto Linguine it is!
I really like toast, usually avocado with a nice lemon, red pepper, and olive oil drizzle but I know it can get a bit boring. So this week I opted for a dressed up, jazzed up, and spiced up sandwich pairing avocado AND my new favorite Roots Hummus, leading me to a 2-Minute Lima Bean Avocado Toast….
A no cheese pizza? I know. You’re either totally into it, or just plain ready to run the other way. I, too, always thought that a pizza wasn’t a pizza without the cheese, but boy was I wrong. I tested this Fiery Sriracha No Cheese Hummus Pizza using a thin and crispy crust with this hot hummus, and it tasted something like heaven.
I’d be lying if I said I didn’t like pasta. Sure I don’t always indulge in it, but when I am feeling like all I need is a nice, rich bowl of pasta, I don’t deny myself of it. If I’m making pasta at home I always follow a few guidelines to make it as healthy as can be: I choose a clean noodle (brown rice, chickpea, mung bean, whole wheat), add tons of fresh veggies (squash, zucchini, mushrooms, red peppers), and experiment with different homemade sauces (tomato, avocado pesto, cauliflower alfredo)….
