Lets talk about eggs.
I’m going to lay it all on the table for you here. I used to be vegan and afraid of eggs. What was I thinking? I have no idea because the day I had eggs again I instantly felt alive again and knew my breakfasts were about to take a turn for the best.
As someone who studied nutrition for four years straight, I know a thing or two about the amazing benefits of eating eggs. That is why I am so excited to share that I have partnered with the American Egg Board to be an Ambassador for their Good Egg Project program!!! The Good Egg Project was created by America’s egg farmers to educate people about where their eggs come from. Find out more about the Good Egg Project and meet their egg farmers here. So what exactly is it about eggs that made me want to write about them after all?
1. Protect against breast cancer.
The choline in eggs has been shown to reduce breast cancer rates by 44%. Women, start scrambling.
2. Give you good vision.
Carotenoids, lutein and zeaxanthin, help keep vision sharp by protecting against macular degeneration and cataracts.
3. Boost the brain.
Choline, folate, and vitamin B12 in eggs all contribute to maintaining nerve cells and preventing against defects.
4. Help maintain body weight.
Eggs have been shown to keep people feeling fuller longer, due to the high protein content. Those who ate six eggs a week were more likely to lose weight than those who didn’t eat any eggs at all.

- 2 eggs
- 1 avocado
- ½ lemon, squeezed
- Sea salt and pepper
- Preheat the oven to 425F.
- Scoop out the inside of the avocado leaving ½" in. rim.
- Break the egg into the avocado. Don't worry if the whites spill over, just clean the sides and place on a baking sheet. Sprinkle lemon juice, salt, and pepper over both avocado halves.
- Bake for 10 minutes or until the yolks set.
