This may sound fluffy and outright ridiculous, but it’s the absolute truth and just what I’m craving right now. After returning home just in time for Passover from what could have been the most incredible trip yet through The Maldives, Dubai, and New York, there has been no better time for a detox and reset….
Long week and plenty of exciting new things on my radar, so I saved my favorites for this week’s Friday Fives.
As a disclaimer, I believe it’s important I inform you that I’m not exactly sure how this “Friday Fives” she-bang works, but I have come across a few blogger chicks doing a similar thing so I decided why not?! This week gets the blog’s first Friday Fives primarily because I finally feel (actually, felt) settled and back into the groove of things. I write settled in past tense because I’m sitting on my first of three airplanes as I write this today….
Well, if I made you guys wait any longer for these Raspberry Whipped Buckwheat Pancakes I would have a gang of hangry followers beating my door down. This has turned out to be the ultimate teaser recipe, accidentally on my part. This recipe was officially released as part of TheWholeTara app, which is currently on a break from the app store, and then went viral on Instagram with tons of recipe requests!
So. It’s finally here and now you have no more excuses to harass me and I have no more excused to procrastinate from sharing this treasure of a recipe. 🙂
On to the recipe itself…
These may be the most delicious pancakes I’ve ever made. Seriously. Not joking. They’re topped with stewed raspberries and coconut cream adding a rich texture to the light and fluffy nature of this breakfast delight. The coconut cream can be made ahead and refrigerated for a shorter prep time. The pancakes are lightened up with gluten-free flour and get their subtle sweetness from natural sources like maple syrup and pure vanilla extract. Adding stewed berries not only tastes like jam heaven, but it also boosts the antioxidant and beauty benefits of these once-guilty pancakes.
Time to build your own stack.
- 2 cups gluten free flour
- 2 Tbsp baking powder
- ½ tsp salt
- 2 cups almond milk
- 2 Tbsp oil, I used avocado oil
- 4 Tbsp maple syrup
- 2 tsp vanilla extract
- 1 cup fresh raspberries
- 1 can coconut cream, whipped and refrigerated optional
- In a large bowl, whisk the flour, baking powder, and salt until combined.
- In a separate bowl, whisk the milk, oil, maple syrup, and vanilla extract until blended.
- Create a crater in the dry ingredients and pour the wet ingredients into the middle of the dry ingredients bowl. Stir lightly to avoid over mixing, which will make a tough pancake. Allow the batter to rest for 5 minutes.
- In the meantime, heat a small saucepan and pour the raspberries into the pan. Stir and mash some of the raspberries and cook until the raspberry juices are released.
- Using a separate pan lightly greased with oil over medium heat, spoon the batter over ensuring that the pancakes sizzle as they are placed on the pan. Cook until golden brown, or about two minutes, then flip. Repeat until batter runs out.
- Stack the pancakes and top with raspberry compote and whipped coconut cream.
These days my Instagram followers are a bit confused on where on Earth TheWholeTara is. New York, Miami, Paris, Jerusalem, Ibiza…? It’s a question I’m even asking myself! The short answer is that I’ve returned back from Asia (mainly Israel this time around) and have landed in Miami for the time being, but my heart remains in New York so I’m spending half of my time there. How the “half of my time” works out is a mystery even to me. Some days I find myself by the beach in Miami and other days drowning in the snow in New York….
It would be cool if I could confidently tell you that getting through an entire day was possible without one (or three) of the below calming rituals. Unfortunately, or very fortunately, such isn’t the case. We all need a little TLC when it comes to taking care of ourselves, both physically and emotionally. Time and time again I learn that I’m not the exception, and chances are you aren’t either. I compiled a short, but very practical list of the things that keep me sane when life is everything but.
And just like that, it’s 2017. I don’t feel, and haven’t ever felt, fond towards New Year’s resolutions. They last a whole 5 minutes, and tend to bring you right back to where you started.
Why not make improvement a year-round thing?…

If there’s one health buzzword that hasn’t eaten your ear off yet, I’d bet it’s probably probiotics.
Even if you have heard of the concept of probiotics, when’s the last time you actually had one? If you would have spoken to me just a month ago I would have told you just that. Sure, I know what a probiotic is and am relatively familiar where I can find them, but it’s not a priority for me. If you talk to me now, probiotics are a staple in my diet and I might’ve found the easiest way to take them too!…
Once upon a time I had all of the time in the world to make several big green smoothies and a huge green salad for any given meal. As life would have it, today that’s just not the case. I must have been living in fantasy land (I was in college, so all the time makes sense) because there’s no way I’d be able to imagine having the headspace, energy, or planning to whip up greens like I did then. I remember vividly being so excited about my morning smoothie and using bunches and bunches of kale and spinach to fill my blender. I also recall making garlicky kale, green soup, and green salad in every which way; my head could explode just thinking about it. While I did feel on top of the world and so energized, I know that now running from meeting to meeting, airplane to airplane, and adventure to adventure, there had to be an alternative out there. …

A restful sleep and a nourishing breakfast go hand in hand, like two peas in a pod. I couldn’t think of a more creative and delicious way to wake up than with my Vanilla Chai Pancakes straight from TheWholeTara app.
This was one of the first recipes I worked on for the app and I remember being so impressed by 1) how delicious they were and 2) how exciting it was to photograph.
The ingredients seem lengthy, but in actuality the whole recipe is easy to make and the majority of the ingredients are spices and natural flavors. The “love” addition to the cakes comes from the use of maca powder, known for its aphrodisiac properties. The pancakes have a rich nutty flavor and can also be made vegetarian instead of vegan. For non- vegans, use one egg in place of the ground flaxseed and water. Serve topped with maple syrup and banana slices.
While these pancakes will give you energy, they’re not a substitute for a good night’s sleep. People struggle with sleep for a variety of reasons, but we sometimes forget that it could be the mattress that’s keeping us from getting a good night’s rest. - 1 Tbsp ground flaxseed
- 2.5 Tbsp water
- 1 cup + 1 Tbsp almond milk
- 1 Tbsp melted coconut oil, more for pan
- 1 tsp apple cider vinegar
- 2 tsp maple syrup
- 1 tsp vanilla extract
- 1 cup GF flour, or flour of your choice
- 1 Tbsp maca
- 1 tsp ginger powder
- 1 tsp baking powder
- 1/4 tsp cinnamon
- ¼ tsp cardamom
- ¼ tsp baking soda
- 1/4 tsp salt
- 1 Tbsp oil of your choice
- In a bowl, prepare the flax egg by whisking together ground flax and water. Add milk, coconut oil, apple cider vinegar, maple syrup, and vanilla. Mix the ingredients.
- In another bowl, whisk together flour, maca, ginger, baking powder, cinnamon, cardamom, baking soda, and salt.
- Create a crater in the dry ingredients bowl and pour in the wet ingredients. Very gently stir the batter leaving some lumps and making sure not to overstir, as it will cause the pancakes to come out tough.
- Heat a pan over medium-high heat for 3 minutes and spread a light layer of oil across the bottom. The pancakes should sizzle as they touch the pan.
- Place ¼ cup of pancakes on the skillet. Once it forms bubbles, about 2 minutes later, flip and cook for another minute until golden brown. Repeat until batter runs out. Serve pancakes with maple syrup and dusted cinnamon.
Part 1: My Dream Kitchen Appliances
When I think of my dream kitchen I think of an elegant french country kitchen with a grand island, elaborate white cabinetry, and a hanging garden situated near the window sill. I think of the warm chocolate chip cookies sitting on the counter and the cutting board laid out after chopping all of the fresh veggies now stored in the refrigerator. While the design and decor are essential, I often leave out the big things. I leave out the things that we needed the kitchen for in the first place, the appliances! I always knew in the back of my mind that I wanted a state-of-the-art kitchen graced with a double stove top oven (one for meat, one for dairy), a “smart” fridge, and a large warming tray. At first I thought I might be asking for too much, but then I got invited to New York City’s Rockefeller Center to marvel over LG’s new Signature line featuring the most advanced kitchen appliances out there, namely their InstaView Door-in-Door Double Refrigerator. I think it’s safe to say my aspirations aren’t so crazy after all….
